The taste of... Turkey

Sebzeli Kuzu Guvec (Vegetable and Lamb Stew)
[serves 6]
INGREDIENTS:
  • 1000g lamb meat
  • 4 tbsp margarine
  • 15 shallots
  • 150g green beans
  • 1 large aubergine
  • 2 medium potatoes
  • 2 medium carrots
  • 2 large tomatoes
  • 50g okra
  • 2 green peppers
  • 1/2 tbsp granulated sugar
  • 3 - 4 glasses of water
  • 5 fresh garlic cloves
  • salt


  • PREPARATION:
    Slice the tomatoes into circles.
    Head, tail and string the beans and cut them into two.
    Scrape and cut the carrots lengthwise and cube them.
    Cut the aubergine lengthwise in two; divide from the middle and cube.
    Peel the shallots.
    Remove the seeds of the green peppers, and cut them into four.
    Peel and cube the potatoes.
    Scrape the fibres on top of the okra.
    Peel the garlic cloves.

    Put the cubed lamb meat in a large casserole dish.
    Top with: a third of the tomatoes, the green beans, carrots, aubergine, shallots; then: half the remaining tomatoes, the green peppers, potatoes, garlic, okra and finally the rest of the tomatoes.
    Add salt to taste (up to half a tablespoon) and granulated sugar, margarine and water.

    Cover and place in moderately hot oven.
    Cook for approximately 90 minutes (until the meat and beans are tender).
