Strawberry and Asparagus Salad

INGREDIENTS:
  • 1 pound fresh white asparagus
  • 1 pound fresh strawberries
  • 1 head of lettuce
  • Juice of 1 lemon
  • 1 cup of plain yogurt
  • 1 bunch of parsley
  • Pepper, dash
  • Salt, dash
  • Sugar, pinch


  • PREPARATION:
    Wash and peel the asparagus and cut off any woody ends. Allow about 15 20 min for cooking time. Cool. Wash the strawberries and cut into quarters. Wash the lettuce and tear into bite sized pieces. Drain the asparagus and cut into 1 inch pieces. Mix the asparagus, strawberries and lettuce together. Combine the lemon juice, yogurt, pepper, salt and sugar into a creamy dressing. Pour over the salad just before serving.

    Tip: Serve with crusty bread (butter optional).
