Germany‘s White Asparagus:

Classic Asparagus Salad

INGREDIENTS:
  • 1 pound rinsed and peeled asparagus
  • ½ cup water in which asparagus has been cooked
  • Oil
  • Vinegar
  • Pepper, dash
  • Salt, dash
  • Chives (to taste)



  • PREPARATION:
    Cook asparagus in salted water, keeping it from becoming too soft, then cool it in ice water. Combine the rest of the ingredients to make the vinaigrette.
